Beginning Buttercream
The purpose of the beginning buttercream class is to teach you my methods of preparing and constructing a 9” round celebration/special occasion cake from start to finish. Class materials can be purchased throughMaples Wedding Cakes.
- In this beginning buttercream class, you will learn how to un-crust your cake layers, split cake layers, and fill cake layers with buttercream and or a torte filling.
- You will learn how to assemble a basic 9”x4” round cake.
- You will learn how to crumb coat the cake and then do a finish coat of buttercream frosting and several techniques to get your buttercream smooth.
- I will teach you several different types of borders such as a basic shell border, reverse shell border, small beaded border, and my own triple beaded border technique.
- I will teach you to make a buttercream rose on a flower nail and how to transfer it to the cake
- I will teach you to do rose buds, drop flowers, and vine work
- There will be a short demonstration on fondant appliqué for buttercream and we will touch on the elements of the Fondant I class that will follow this class.

Fondant I Class
The purpose of the Fondant I class is to teach you my methods of preparing and constructing a 6”x4” round and a 9”x4” round celebration/special occasion cake, or wedding cake from start to finish. Class materials can be purchased through www.maplescakeblog.com.
In this Fondant I and buttercream class:
- I will teach you how to cover and finish your board in fondant to match your cakes
- You will learn how to un-crust your cake layers, split cake layers, and fill cake layers with buttercream and or a torte filling.
- You will learn how to assemble a basic 9”x4” and a 6”x4” round cake
- You will learn how to crumb coat the cake and then do a finish coat of buttercream frosting and several techniques including kneading, coloring, rolling fondant, polishing fondant, covering cake layers in fondant, and trimming excess fondant properly
- I will teach you my method of properly stacking and constructing a two layered fondant cake
- You will learn different types of borders including buttercream, royal, and fondant borders, including fondant ribbons, pearls, lace ribbons, and fondant flower borders
- I will demonstrate several different First Impression molds that make beautiful decorations for your cake including, swagging, flowers, and trimmings
- I will demonstrate how do fondant appliqués including flowers, polka dots, and lace cutters
- I will demonstrate my fondant ribbon technique and how you can use brooch’s for your cake appropriately
- I will demonstrate how to properly make and dry a 3 loop fondant bow with tails.

Romantic Wedding Cake Class
The purpose of the Romantic Wedding Cake class is to teach you my methods of preparing and constructing a stacked wedding cake from start to finish. Class materials can be purchased through www.maplescakeblog.com.
In this Romantic Wedding Cake Class:
- I will teach you how to cover and finish your board in fondant to match your cakes
- You will learn how to un-crust your cake layers, split cake layers, and fill cake layers with buttercream and or a torte filling.
- You will learn how to assemble a basic 12”x4” 9”x2” 7”x4” and 5”x4”round cake
- You will learn how to crumb coat the cake and then do a finish coat of buttercream frosting and several techniques including kneading, rolling, polishing, and covering cake layers in fondant, and trimming excess fondant properly
- I will teach you my method of properly stacking and constructing a four layered fondant wedding cake from start to finish, including plastic and wooden dowels
- I will teach you how rubber stamping embossing and over piping
- I will teach you how to do royal brushed embroidery and incorporate that into the wedding cake design
- Once everything is piped, I will show you how to do luster dust painting with Super Pearl dust on all the decorations
- I will also be demonstrating several different fondant mat techniques to give different texture options for the outside of your fondant cake
